Step 1
Trim and season the fillet of
Garlic (1 clove)
with
Beef (800 g)
and
Ground Black Pepper (to taste)
, pan sear on all sides with
Olive Oil (30 mL)
. Add the
Fresh Thyme (1 sprig)
,
Fresh Rosemary (1 sprig)
and
Salt (to taste)
and fry briefly. Allow the meat to cool down.
Step 2
Put the fillet of beef, the thyme, rosemary and garlic into a vacuum bag and vacuum seal it on level 3. Place the bag in the perforated cooking tray and put it into the cold cooking space. Steam.
Step 3
Vacuisine 58°C for 2 Hrs
Step 4
Take the fillet of beef out of the vacuum bag and serve.
