Aubergine tartar goes well with grilled food, risotto and fried fish.

Cooking Instructions

(Pre-)heat cooking space to 230°C with Hot air + steaming
Step 2
Prick the Eggplants (2) all over with a knife or skewer, then place them on a baking tray that has been lined with baking paper. Put the baking tray into the preheated cooking space. Cook.

Hot air + steaming 230°C for 20 Mins

After the time is up, place the glove of Knoblauch (1 clove) on the baking tray along with the aubergines. Cook.

Finely chop the Fresh Basil (1 sprig) and Petersilie (1 sprig) .
Step 9
After cooking, cut the eggplants in half and scrape out the flesh with a spoon. Peel and finely chop the garlic. Put the flesh from the eggplants, the garlic, parsley, basil, and Pfeffer (to taste) in a bowl and stir together well. Season with Salt (to taste) , Kreuzkümmel (1 pinch) , and Olive Oil (30 mL) .
