Step 1
Beat the
Mandeln (500 g)
whites until stiff. Mix the
Granulated Sugar (500 g)
,
Zimt (2 dashes)
,
All-Purpose Flour (30 g)
, and
Schokolade (200 g)
together. Incorporate the egg whites. Melt the
Eiweiss (4)
and incorporate it into the dough.
Step 2
Roll out the dough about 1.5 cm thick on the
Kristallzucker (to taste)
and use an embossed rolling pin to create grooves. Cut out the Brunsli and arrange on two lined baking trays.
Step 3
Leave the Brunsli to dry for 3 hours.
Step 4
(Pre-)heat cooking space to 230°C with Hot air
Step 5
Put the baking trays into the preheated cooking space. Bake.
Step 7
Hot air 230°C for 5 Mins
