Cooking Instructions

Step 1
Beat the Eiweiss (2) whites until stiff. Fold the Almond Extract (3 drops) and Mandeln (200 g) into the stiff egg whites. Add the Amaretto (30 mL) and Granulated Sugar (150 g) . Spoon the mixture into a piping bag with a round nozzle and and pipe approx. 2 cm diameter nuggets on a lined tray.
Step 2
Dust the nuggets with plenty of Powdered Confectioners Sugar (as needed) . Allow the amaretti to dry for about 6 hours or overnight.
Step 3
(Pre-)heat cooking space to 220°C with Hot air
Step 4
Press each nugget with three fingers to create the typical amaretti shape. Put the baking tray into the preheated cooking space. Bake.
