Step 1
Quarter the
Olive Oil (45 mL)
lengthwise and season with
Kartoffeln (1 kg)

. Line the baking tray with baking paper and place the wedges on it.

Cut the
Chicken Breasts (4)
into nugget-sized, about 3 cm large pieces.

(Pre-)heat cooking space to 230°C with Hot air + steaming.

Prepare three bowls for breading: put the
Breadcrumbs (250 g)
in one bowl, put the beaten

in the second bowl and put the
All-Purpose Flour (100 g)
in the third bowl.

Season the pieces of chicken with the

Dust the pieces of chicken in the flour, coat in the beaten egg and then roll in the breadcrumbs.

Cover the baking tray with baking paper and lay the breaded nuggets on it. Brush the nuggets with
Vegetable Oil (as needed)

Put the baking tray with the wedges into the preheated cooking space at level 1. Bake.
Step 9
Put the pastry in.
Step 10
Hot air + steaming 230°C for 10 Mins.
Step 11
Put the baking tray with the nuggets into the cooking space at level 3. Continue to bake.

Put the pastry in.
Step 13
Hot air + steaming 230°C for 20 Mins

Caramelise both the
Zucker (100 g)
and
Onions (2)
in a pan. Coarsely chop the
Zucker (100 g)
,
Curry (1 pinch)
,
Wein (200 mL)
, and
Peperoncini (1)
. Add the
Garlic (2 cloves)
,
Nelken (2 g)
,
Fenchelsamen (2 g)
,
Petersilie (3 g)
, and
Koriander (2 g)
to the sugar. Mix well and deglaze with the
Fresh Ginger (2 pieces)

Allow it to simmer for around 30 minutes until the mixture has thickened.
Step 16
Add the
Whole Peeled Plum Tomatoes (800 g)
and allow to simmer for another 60 minutes.
Step 17
Blend the ketchup well with a hand-held blender or a food processor and then strain through a sieve to remove any coarse pieces.
Step 18
Allow it to rest in a cool place for around 1 hour before serving. If the ketchup is too runny, simply thicken it with cornflour before blending.
